Almond Llokum Preparation

The production and use of almond Turkish delight (llokum) take 10 to 15 days before it is consumed (after this period it loses freshness, and taste.).

Ingredients for almond Turkish delight:

1. Almond kernels, which are prepared since autumn by every family, often from their own trees. Once almonds are cracked, kernels are selected in order to be as whole and clean as possible, as they affect the taste of the Turkish delight. Kernels are laid out on a baking tray, leaving them still until dried. They are then lined into a cloth bag and stored until use.

2. Rose water, which is ensured during May out of the fragrant rose.

How to make the Turkish delight.

A certain quantity of almond kernels is ready depending on the number of Turkish delights to be made. Kernels are put in a pot of water and brought to a boil over heat. The pot is left on heat until it starts to boil. Once the pot is taken off the heat, the juice is drained, and the outer layer of kernels starts to be peeled. The peeled kernels are spread on a baking pan and left for a certain time until they dry. Next, a handful of almond kernels are crushed using a bronze or porcelain mortar and pestle. Care should be taken for almond kernels not to be finely crushed, but retained in small grains, as fine crushing causes their taste to be lost. The mixture is prepared in a deep pot, in which are added the floured almonds. They are dusted with a handful of powdered sugar and stirred with the minced almond stuff. Next, a teacup with rose water is poured little by little into the pot and the mixture is then kneaded. This is a particularly important step during the preparation of the mixture which must be kneaded by hand so that it is not too soft nor too hard. After preparing the mixture, it is poured into the prepared mold. The mixture is cut into portioned pieces, which are gently ball-shaped with both hands. Each of them is then pressed down firmly into the mold. All pieces are further unmolded onto a pan and allowed to be set for 10-15 days, and finally, Turkish delights are ready to taste.

Almond Turkish delights are typically served on special occasions and ceremonies, such as engagements and weddings, as the first treat for guests and friends.
